When I think golden, I think sun. When I think sun, I think of everything the earth has to offer us. The sun, the moon, the rain, the earth all contribute to the growth of our healing foods. Herbs and spices in particular are a great source of vitamins and minerals full of immune boosting, anti-inflammatory, detoxifying properties and can balance blood sugar levels.

Most of us cook with spices, some of us use butters and others use oils. Clarified butter on the other hand is full of omega's, it is alkalizing, rich in vitamins A, E, D + K and can be safely used at high temperatures. Combine it with turmeric and other vibrant flavorful spices you have a creamy healthy delight. One of the items I cook most at home are roast root veggies as my daughter loves them as snacks. I usually toss them in olive oil and salt; this eventually gets boring. We also love any opportunity to sneak in extra goodness for the body. Golden butter by CounterTop foods does exactly that. A light blend, creamy texture, subtle flavor but rich in nutrients. I am currently obsessed. As Thanksgiving is upon us, followed by Christmas, I felt compelled to share this golden jar of joy, to spread richly across your holiday feasts.  Then again for left overs...

1. Preheat over to 375 degrees.

2. Place baking sheet/pan in the over to get warm.

3. Cut vegetables of your choice.

4. Remove baking dish from oven, add 2 tbsp of Golden Butter to the heated pan to melt.

5. Toss the vegetables in the melted butter.

6. Put the veggies in the over for 30minutes, tossing once.

7. Remove and let rest, season with salt & pepper if you like.

* they are delicious cold too, so make a large batch.

In the pictures for this post I have chosen to use sweet potatoes, purple potatoes, butternut squash, beets, carrots and acorn squash. You can use any combination you like. Everything works.

Back to holiday talk though, actually it is all holiday talk, honey, latte...it's all festive. CounterTop has just introduced Blends with Benefits, four new spice blends which pair so nicely with any upcoming meal.
